Lamb Koftas with Garlic & White Bean Mash
Age: 6+ months
Ingredients:
KOFTAS:
500g lamb Mince
2 eggs (can swap for 2 x flax eggs and then can leave the chia out)
1 tsp cumin, corriander and smoked paprika
1/2 cup quick oats
1/2 tbs chia seeds
1 tsp minced garlic
1/2 tsp lemon zest
BEAN MASH:
1 can of cannellini beans drained and rinsed
1 lemon (will use the juice of 1/2 and zest of 1/4)
1/2 cup of vegetable stock or bone broth
1 tsp minced garlic
1 tsp olive oil
OPTIONAL- 1 tsp of tahini stirred through at the end
Method:
KOFTAS:
Mix your ingredients together in a bowl
Roll into logs/sausage shapes - will make 8-10.
Can then either cook them in a fry pan for 10-12 mins or pop them into an oven at 170 degrees for 20 minutes. I suggest the oven so you can make your mash while it cooks.
BEAN MASH:
Heat a sauce pan and add in your olive oil and garlic
add your beans and your stock
Then add your lemon
Cook for 3-5 minutes until soft
Fork mash and serve (can also puree if wanting a smooth consistency)
Why we love these:
lamb is a wonderful iron rich food for your little one! This recipe freezes really well too! The mash is also a good one for the freezer- goes well with fish or as a dip or spread on thin rice cakes or finger foods.
