Chickpea Blondie Bite
These blondie bites are:
-allergy friendly
-high fibre and protein rich
-delicious
-freezer friendly
Free from: wheat (has oats but can be swapped out for gf flour), egg free, can be nut free, dairy and soy free.
Ingredients:
1 can chickpeas drained and rinsed
1/2 cup of nut butter*
1/2 cup oats - can also used GF or regular flour
1 -2 x ripe bananas (160-180g banana)
2 tsp vanilla extract
1.5tsp baking soda
1/8 tsp salt
2 tbs maple syrup
1/2 cup choc chips**
What to do:
Preheat the oven to 180°C.
Add the chickpeas, nut butter, oats, banana, vanilla extract, baking soda, salt and maple syrup to a food processor or high-powered blender.
Blend until the mixture is completely smooth.
Add the chocolate chips and gentle hand mix through batter to evenly distribute them through.
Pour the mixture into a lined baking tin and smooth the top.
Bake for 25-35 minutes, or until lightly golden and firm to the touch. (Tip-The blondies are ready when they have puffed up and the surface is golden brown. If you insert a toothpick in the middle, it should come out clean -a few moist crumbs are okay but no wet batter).
Allow to cool completely before slicing into squares and popping extra into freezer for lunch box snacks.
Notes
Cashew butter creates a mild flavour, but peanut butter works really well too.
For a nut-free version, swap the nut butter for sunflower seed or pumpkin seed butter.*
Use dairy-free chocolate chips if needed can also use frozen raspberries to make chocolate free**
