Chickpea Blondie Bite

These blondie bites are:

-allergy friendly

-high fibre and protein rich

-delicious

-freezer friendly

Free from: wheat (has oats but can be swapped out for gf flour), egg free, can be nut free, dairy and soy free.

Ingredients:

  • 1 can chickpeas drained and rinsed

  • 1/2 cup of nut butter*

  • 1/2 cup oats - can also used GF or regular flour

  • 1 -2 x ripe bananas (160-180g banana)

  • 2 tsp vanilla extract

  • 1.5tsp baking soda

  • 1/8 tsp salt

  • 2 tbs maple syrup

  • 1/2 cup choc chips**

What to do:

  1. Preheat the oven to 180°C.

  2. Add the chickpeas, nut butter, oats, banana, vanilla extract, baking soda, salt and maple syrup to a food processor or high-powered blender.

  3. Blend until the mixture is completely smooth.

  4. Add the chocolate chips and gentle hand mix through batter to evenly distribute them through.

  5. Pour the mixture into a lined baking tin and smooth the top.

  6. Bake for 25-35 minutes, or until lightly golden and firm to the touch. (Tip-The blondies are ready when they have puffed up and the surface is golden brown. If you insert a toothpick in the middle, it should come out clean -a few moist crumbs are okay but no wet batter).

  7. Allow to cool completely before slicing into squares and popping extra into freezer for lunch box snacks.

Notes

  • Cashew butter creates a mild flavour, but peanut butter works really well too.

  • For a nut-free version, swap the nut butter for sunflower seed or pumpkin seed butter.*

  • Use dairy-free chocolate chips if needed can also use frozen raspberries to make chocolate free**
