One Pot BBQ Brisket with Black Beans

Age: 6+ months

Ingredients:

  • 1-1.5 kg beef brisket

  • 2 onions finely diced

  • 1 tsp olive oil

  • 3-4 cloves of garlic (I measure with my heart)

  • 1-2 carrots diced

  • 1 celery stick diced

  • 1L stock (low sodium- can also leave out)

  • 1/2 tsp cinnamon

  • 1 tbs smoked paprika

  • 1 tsp coriander

  • 1 tsp dried oregano

  • 1/2 tsp cumin

  • 2 bay leaves

  • 1 tbs brown sugar

  • 1 tsp apple cider vinegar/white vinegar

  • 140g tin of tomato paste

  • 400g canned tomato

  • 1 can black beans (rinsed an drained)

Method:

  • Preheat oven to 160 degrees

  • Cook your carrot, onions, celery and garlic in olive oil on n the stove top (ideally using a dish you can then transfer direct to oven later) until softening on stove top. Add everything else in (except black beans).

  • Transfer to oven with lid on and cook for 6 hours (or until falling apart).

  • Add a tin of black beans at the end.

Why we love these:

A simple throw it all together dish that you can walk away from for a few hours! Serve it over a few nights with different sides.

Serve it with:

Salad, roast veggies, in a Mexican rice bowl or tacos/wraps or even on pizza!
