One Pot BBQ Brisket with Black Beans
Age: 6+ months
Ingredients:
1-1.5 kg beef brisket
2 onions finely diced
1 tsp olive oil
3-4 cloves of garlic (I measure with my heart)
1-2 carrots diced
1 celery stick diced
1L stock (low sodium- can also leave out)
1/2 tsp cinnamon
1 tbs smoked paprika
1 tsp coriander
1 tsp dried oregano
1/2 tsp cumin
2 bay leaves
1 tbs brown sugar
1 tsp apple cider vinegar/white vinegar
140g tin of tomato paste
400g canned tomato
1 can black beans (rinsed an drained)
Method:
Preheat oven to 160 degrees
Cook your carrot, onions, celery and garlic in olive oil on n the stove top (ideally using a dish you can then transfer direct to oven later) until softening on stove top. Add everything else in (except black beans).
Transfer to oven with lid on and cook for 6 hours (or until falling apart).
Add a tin of black beans at the end.
